This is an oldie but goodie. Worth reposting.
I LOVE making savory salads with sweet fruit. A fruit salad is delicious. But a savory fruit salad is spectacular! It’s unexpected and it just pops.
I’ve made this salad in the past and it’s easily one of my favorite summer meals.
Ingredients
- 2 cups water melon, cubed, seeded
- 1 medium cucumber, peeled, cubed
- 1 large tomato, cubed
- 1/2 cup to 1/cup black figs, cubed
- 1/4 cup medium onion, hair-thin slices
- 2 tbsp mint or basil (or both), finely sliced
- 1/2 tsp sea salt
- 1/4 tsp raw honey
- 1/4 cup apple cider vinegar
- 3/4 cup olive oil
- Black pepper, liberally
Directions
Put all of your cubed fruit, onion and herbs in a bowl.
Mix the dressing ingredients and taste your dressing. Adjust salt if needed. It should be a nice sweet-savory taste. Drizzle enough dressing to coat your salad. You will likely have leftover dressing, which you can keep in a mason jar in your pantry to use with your next salad.
Let this salad sit in the fridge for at least 20 minutes before eating. It’s incredible what onions with watermelon, figs and tomatoes will do!
